Tuna Pasta Salad Without Mayo

A Mediterranean tuna pasta salad without mayo, built on white beans, feta and olives. About 30g protein per serving.

Ingredients
  

  • 220 g 2 cans, 5 oz each light tuna in water, drained
  • 227 g 8 oz whole wheat fusilli or farfalle, dry
  • 350 g 1 can, 15 oz cannellini beans, drained and rinsed
  • 120 g feta crumbled
  • 60 g Kalamata olives pitted and halved
  • 200 g cherry tomatoes halved
  • 3 tbsp olive oil
  • 1 lemon juiced
  • 1 garlic clove minced
  • 1 tsp dried oregano
  • 1 tbsp red wine vinegar

Method
 

  1. Cook the pasta, drain, rinse, and cool completely.
  2. Rinse the beans thoroughly.
  3. Whisk together olive oil, lemon juice, garlic, oregano and vinegar.
  4. Combine pasta, tuna, beans, tomatoes and olives with the dressing.
  5. Fold in the feta last.

Notes

  • High sodium recipe (~810 mg/serving), reduce or omit olives to bring it down.
  • Keeps 3 days refrigerated.
