High Protein Curried Chickpea and Egg Salad

A make-ahead curried chickpea and egg salad with 36g of protein and 15g of fiber per serving, in a toasted curry and Greek yogurt dressing. Better on day two.

Ingredients
  

Salad
  • 300 g 6 large eggs
  • 450 g 2¾ cups canned chickpeas, drained and rinsed
  • 60 g 4 scallions, sliced
  • 30 g ½ cup cilantro, chopped
  • 30 g 3 tablespoons golden raisins
Curried yogurt dressing
  • 300 g 1¼ cups plain 2% Greek yogurt
  • 10 g 4 teaspoons curry powder
  • 30 g 2 tablespoons mango chutney
  • 20 g 4 teaspoons fresh lemon juice
  • 1 g ½ teaspoon freshly ground black pepper
To serve
  • 300 g about 6 cups romaine lettuce, chopped

Method
 

Make the salad
  1. Boil the eggs for 9 minutes from the moment the water returns to a boil, then cool them completely in cold water and peel.
  2. Toast the curry powder in a small dry pan over medium heat for 30 to 45 seconds, until fragrant, then tip it onto a plate and let it cool.
  3. Drain and rinse the chickpeas thoroughly and dry them.
  4. Whisk the Greek yogurt with the cooled curry powder, mango chutney, lemon juice and black pepper.
  5. Quarter the eggs and fold them into the dressing with the chickpeas, scallions, cilantro and raisins. Fold rather than stir.
Serve
  1. Chill for at least an hour, ideally overnight. Serve over chopped romaine, adding the leaves at the last moment rather than storing them in the salad.

Notes

  • Toasting the curry powder for under a minute is the difference between a dressing that tastes of spice powder and one that tastes like a sauce. Let it cool before adding it to the yogurt.
  • Boil the eggs 9 minutes, not 8. A fully set yolk holds up over three days; a soft one weeps into the dressing.
  • Keeps 3 days. Store the romaine separately and assemble each portion as you eat it.
