High Protein Chia Pudding

A high protein chia pudding with 28 g of protein and 8 g of fiber per serving, made with Greek yogurt instead of plant milk. No protein powder.

Ingredients
  

  • 200 g ¾ cup + 2 tablespoons plain Greek yogurt, 2%
  • 130 g ½ cup + 1 tablespoon milk, 2%
  • 20 g 2 tablespoons chia seeds
  • 60 g ½ cup strawberries, sliced
  • 12 g 2½ teaspoons maple syrup
  • 2 g ½ teaspoon vanilla extract

Method
 

  1. Whisk the Greek yogurt and milk together until completely smooth. Stir in the vanilla and maple syrup.
  2. Add the chia seeds and stir for a full 30 seconds.
  3. Wait 10 minutes, then stir again to break up any clumps.
  4. Cover and refrigerate at least 4 hours, ideally overnight.
  5. Top with sliced strawberries just before eating.

Notes

  • The ten-minute second stir is what prevents a solid clump at the bottom of the jar.
  • Keeps 4 days refrigerated and improves on day two. Do not freeze.
  • Add fruit at serving, not during prep — it thins the pudding overnight.
