Ingredients

  • 1.5 lb raw shrimp peeled and deveined (680 g), 16/20 or 21/25 count
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic 10 g, minced
  • 1.5 tsp smoked paprika
  • 0.75 tsp dried oregano
  • 0.25 tsp red pepper flakes
  • 0.75 tsp kosher salt
  • 0.25 tsp black pepper
  • small handful flat-leaf parsley chopped
  • lemon wedges to serve

Method

Prep
  1. Pat the shrimp completely dry with paper towels. If using frozen, thaw in cold water for 10 minutes first, then dry thoroughly.
  2. Whisk the oil, lemon juice, garlic, smoked paprika, oregano, red pepper flakes, salt and pepper. Add the shrimp and marinate 15 minutes, 30 at the most.
Skewer and grill
  1. Thread the shrimp onto two parallel skewers per row so they can't spin. Soak wooden skewers 20 minutes first.
  2. Preheat the grill to 400°F and oil the grates. Grill 2 to 3 minutes per side, turning once, until the shrimp are opaque and curled into a loose C shape.
Finish
  1. Scatter chopped parsley over the hot skewers and squeeze a lemon wedge across them. Serve immediately; no resting needed.
